There are three things that are fairly synonymous with summertime in the great city of Chicago: street festivals, the best local produce, and a hot grill. While we may not have a street festival hidden in our newest, limited edition salad, we do play a wide variety of outstanding music, much of which has been or will be featured at a Chicago festival this summer. That being said, our Grilled Panzanella Salad features an embarrassment of Midwest riches and great char-grilled flavors that are sure to please.
First, we received absolutely gorgeous local, organic heirloom cherry tomatoes and strikingly brilliant summer squash. The colors are entrancing, but the taste, how can one describe the perfection of what nature produces without chemicals and pesticides and everything else that is all too common these days. The flavor of these cherry tomatoes is so good that it made me laugh and smile and love food all over again. The tomatoes are so pure and good that it would be a crime against all that is good to do anything to transform their flavor. So we didn’t. The salad is comprised of heirloom cherry tomatoes, paper-thin red onions, frisee, roasted red peppers, and a touch of feta. Everything is lightly dressed with a lemon thyme vinaigrette and grilled-to-order croutons are tossed to the mix. As all this goodness is being combined in one bowl, brilliant yellow summer squash are grilled to complement the charred flavor already present from the red peppers and the bread.
This salad combines many elements that make summer the best time of the year and we are so pleased to be showcasing the best local and organic produce available. A fresh citrus vinaigrette, grilled vegetables and bread, and local produce combine to make this a winning dish, but supplies are limited, so hurry in to enjoy the bounty of summer at Etno!
